Peach Mojito with Sugar Cane

A fresh drink for a steamy afternoon.

Ingredients:

  • 20 sprigs fresh mint
  • 2 oz. simple syrup
  • 4 oz. fresh lime juice
  • 10 oz. light rum
  • 10 oz. Peach Schnapps
  • Ginger Ale
  • 2-4, 8 inch stalks of sugar cane

Preparation

  • In a large pitcher, stir the mint, simple syrup and lime juice until the mint is aromatic.
  • Add rum and peach schnapps.
  • Stir lightly to blend.
  • Pour mixture into highball glasses filled with ice - stir.
  • Top off glasses with ginger ale.
  • Garnish with sugar cane
